If I built a structurally sound log cabin, does it have to have electricity to be up to code?
I know that codes vary by area. But in general, what are the minimum requirements for a house meeting basic codes? Other than being structurally sound, I am planning on installing a wood stove (meeting requirements of course) using propane stove/oven and oil lamps for lighting. Would this be generally okay on your own land do you think? What else do I need to consider? Thanks for any suggestions!

It depends upon zoning for the county and building codes. One thing you may need to look at is sanitary requirements. For example you may need a chemical toilet instead of an outhouse over a hole in the ground, and some way to dispose of graywater (from sinks).
I stayed in a cabin like that in northern WI. It had LP gas stove and lights (with mantles like Coleman lantern) and wood stove for heat. We had to get some water from the creek to prime the pitcher (hand) pump on the sink. It was winter, so we did not linger in the outhouse. We were able to drive in through a foot of snow with just tire chains on the 2WD 62 Ford station wagon (which was not that old at the time), although, we used one of the snowmobiles to tow in the snowmobile trailer.

Problems With Living In Log Cabins
If you are the kind of person who loves to live a life that is more close to nature, then a log cabin would be the best place. Living in a log cabin is a whole new experience to contemporary housing. When you live in a log cabin, it becomes a day to day riser of your soul. A metal made home gives a more modern look, where as a log made house brings you back to a peaceful and tranquil environment. When on one side the log house is a symbol of contentment, on the other hand it requires more attention when it is constructed. The fungal intrusion is the most common problem in such homes but when we talk about cool structures it is not a problem in Masonry or Masonry South Florida structures.
If you are planning a new home based on log structures, try to focus on the following contemplations:
The air passage and ventilation is the first and the most important thing to consider. The house should have the structure that is based on a good ventilation system. During the construction, try to keep some positive gaps for the windows. The windows create passage for the air and your house is always at a good temperature for the inhabitants. Taking this basic step prevents a big problem of air dormancy.
The second objective is to remove the variable of humidity. The installation of a de-humidifier would be a right thing to do. It will cause a reduction of humidity. De-humidifiers remove excess moisture in the air which helps to reduce the musty smell. When there is high presence of humidity, the musty smell remains in your house. The sorbents are the vacuums which completely absorb the musty smell.
For the construction of log cabin, wood is employed. In fact, wood comprises a major part of a log cabin, with windows, doors, walls and everything else made out of the same material. So it is necessary to make all the preclusions, before things get worst. There is much chance of termite incursion, so try to be connected with the pest controlling professionals. You can also keep the pest controlling agents in order to avoid any problem of termites.
Wood is a light-sensitive material. There is a greater chance that it will store some odorless holes or circles. Baking soda is the best and most economical solution to cover up the problem. The boxes of baking soda are easily available in the market; you can keep the boxes at the corner of each room. Baking soda also evacuates all the stinking smell, which refreshes your house. It is a very less expensive solution, which keeps your house with a clean environment.
Musty smells is a big problem, especially in wooden homes. Vinegar is a simple remedy to get rid of the problem. Fill the bowls with an average volume of vinegar and place at the corner of each room. This makes your house endorsed by a refreshing smell and the stinking scent is completely eradicated.
